Freezer-Ready NO SUGAR added Banana Muffin Recipe (Elderberry option)

Do you feel the pain of wastefulness when you have to clean out the fruits and veggies your family just didn't quite get to, before it turned?
It pains me and is something I've been working on for this new year.
We are being more creative with less-than-peak stage produce, and these Banana Muffins not only use up the black bananas on my kitchen counter, but they are also my family's fave!
They happen to be MY fave because I can batch bake them and freeze for later!
NOTE: Before you go thinking this is good time-management or planning skills, let me assure you it's not -- I'd have to change the name of this blog and go find new friends -- It's really just the guilt of throwing away black bananas combined with the EASIEST Freezer-Ready Banana Muffin Recipe EVER!
They are also NO-SUGAR added, use whole wheat flour and the walnuts are optional!
Keep reading to find out how to make them into the immunity-boosting Elderberry Banana Muffins I mentioned in my How to Make Elderberry Syrup and Lego Gummies post {HERE}.

easy Banana Muffins
Ingredients:
2 cups white flour
2 cups whole wheat flour
2 tsp baking soda
1 cup butter (softened)
1 cup apple sauce
4 eggs
2 tsp vanilla
1/4 cup milk (I sub almond or coconut milk)
6-7 mashed black bananas
Optional: 1 cup chopped walnuts or 1 cup dark chocolate chips
Mix the sugar, softened butter, vanilla and milk until smooth. Incorporate the eggs, one at a time.
Add in one of the two cups each, of white and whole wheat flours plus all of the baking soda. (You're adding in half of the total amount of flours here, the rest will be added soon).
Mix in the mashed bananas and combine well.
Add in the remaining 2 cups of flours (one cup of white and one cup of whole wheat).
If you wish to add the walnuts or chocolate chips, fold those in last.
Lightly grease your muffin pans or use cupcake liners instead, like I do.
Scoop (I LOVE using an ice cream scooper for less mess!) the batter into each space, filling about 3/4 of the way.
Bake at 350 degrees for 10-12 minutes.
Makes 36 muffins.
To freeze, line them up on cookie sheet and place in the freezer for approx. 5 hours. Once frozen, transfer to ziploc bags or freezer safe containers.
elderberry option:
Remember I mentioned we also love the Elderberry Banana Muffins which use the left-over elderberries from my Elderberry Syrup and Elderberry Lego Gummies?
Just add 1/4 cup of the strained elderberries to the ingredients above, at the same time with your mashed bananas. Reduce amount of bananas by one banana.
You are utilizing what's known as the Natural Tamiflu and giving your family an immunity-boosting, power packed superfood in a delicious muffin!
